Chilled Oysters

12 or 24 Oysters, in half shells.
½ cup lemon juice.
½ teaspoon crushed garlic.
Cracked pepper.
1 small onion, finely chopped.
½ cup dry white wine.
3 small chillies, deseeded, finely chopped.
2 tablespoons extra virgin olive oil.
1 tablespoon fresh chopped chives.

Remove oysters from shells, clean shells and store in refrigerator. Place lemon juice, garlic, onion wine and chillies into a saucepan and bring to boil.
Simmer until onion is translucent, remove from heat and let cool.
Stir in oysters and marinate in the refrigerator overnight.

When ready to serve, stir in olive oil and spoon the oyster mix into shells, sprinkle with chives and serve on a bed of crushed ice.
